品茶的時候,一般會根據色澤、味道和飲用時的口感這三個層次判斷是否一杯好茶。以普洱為例,一般酒樓選用的茶葉及沖泡方法參差,容易泡出近「齋啡」一樣的深色。但真正上品的普洱,色澤應該像紅酒。
